Success Story: Kate McCullough, Digestive Pain & Discomfort

It all started in early 2015 when about once a month I would get really bad diarrhea and stomach pains. I thought I might be gluten intolerant so I went gluten free for months with still no improvement. I decided to be extra sure I wasn't allergic to gluten by going to the doctor in July 2015 to get an allergy test for gluten, but it came back negative. The doctors had no idea why I had all this stomach pain and did not know how to help me. So all year my digestion was just not right and the amount of times I was getting diarrhea and stomach pains just kept increasing until January 2016 when it got really bad. I was going to the toilet 5-6 times a day, everyday, I had the worst stomach pains every time I ate and I had no idea what was going on. I went to the doctors again to try find an answer and then sent me to get some blood tests and stool tests which all came back fine so i had no more answers as to what was causing my digestives issues.

After suffering for a month of this I decided I needed to try get some other help, so I and saw a Ayurveda consultant, who put me on a strict diet and told me to cut out a lot of foods and mainly eat cooked foods including lots of rice, lentils/dhal and cooked vegetables and to only have 1 piece of fruit a day which had to be cooked. I found this very difficult to follow but I was determined to get better so followed what she said. But I only got worst, the stomach pains increased, my bowel movements increased, I felt so tried and low on energy all the time I just didn't know what to do anymore. My body was clearly telling me that it was not happy eating this way and something need to change. 

Then I met Shukul Kachwalla at a vegan potluck in Auckland and found out he had a nutrition workshop coming up in a week and I knew I just had to go. I went to the workshop run by him and his brother and learnt an incredible amount of knowledge and took everything they said on board and left with confidence they they could help me get better. I followed what they said, which was mainly raw till 4, as many raw fruits and vegetables as I desired during the day, and cooked vegetables/starches for dinner, while avoiding grains to really give my digestions a break. Just after doing this for 2 weeks everything had changed. I had no more stomach pains, i was only going to the toilet 1-2 times a day, I had all my energy back and I felt like a new person again. Its amazing how just simply eating how our bodies are really designed too everything just naturally falls back into place. I can pretty much eat everything now with no problem, but still feel my best eating as much raw fruits and vegetables as I wish, while limiting the amount of legumes and high fatty foods. I will treasure the knowledge they taught me forever and know they will always be willing to help me if I had anymore issues. 

So I just wanted to say thank you so so so much Shukul and Shamiz for sharing your knowledge with me and helping me turn my life around for the better, I am forever thankful for what you guys do to help me and so many other people like me. Where should we get our Iron from?

If something is in excess that doesn’t mean it is good for us! Lets talk about iron absorption with red meat compared to plant foods. Funny how people think just because something is more absorbable it should therefore be better for us. Heme iron and non-heme iron. There is a big difference. Heme iron is obviously from dead flesh (blood) and non heme from plant foods!

Because the human body has no mechanism to rid itself of excess iron we have evolved to regulate this. Iron is absorbed through our intestines and if iron stores get too low the intestines know when to boost the absorption, if iron stores are too high then the intestines block the absorption to maintain us in the sweet spot! This also only works with the primary source of iron in the human diet from plant foods (non-heme).

Heme iron from dead flesh however cannot be regulated by the body and therefore absorbs straight through the intestinal wall even if there is excess iron in the body. This is when the body gets into an iron overload and creates all sorts of problems and sets the body up with a higher risk of dis-ease.

So the body has no control over iron absorption when eating animal flesh. This is why Vegetarians and Vegans tend to be lower in iron when it comes to blood tests because the 'normal' range is elevated due to all those people eating flesh which in turn boosts there level of iron in the body without knowing it is much more harmful for them.

In terms of how much the body can absorb we believe that it is very hard to get an exact number from the foods we eat because you can't really say that this plant food has this much iron in it so my body will absorb all of it. Iron absorption also depends on how many other nutrients that plant food has because all of the nutrients from that plant food work together to get absorbed. If you eat a variety of WHOLE foods (Fruits, Vegetables, Whole Grains and Legumes) you will get the exact amount of iron the body needs so that you can be in that sweet spot :)

Where do you get your Protein?

Every single food you eat has protein in it so in terms of getting enough on a vegan diet you will get plenty. (Have you ever heard of anyone with protein deficiency?) If you are eating a wide variety of fruits and veggies you are getting all eight essential amino acids required by the body for all its protein needs (even for exercise or sport). Fruits & Veggies are premium, sufficient sources of amino acids, the building blocks of protein which our cells (primarily those of the liver) use to synthesize ALL of its protein. The body in fact recycles 80% of the protein it makes! If you are looking for higher protein foods, beans, legumes, lentils all have a great amount of protein.

Whole Food Nutrition or Fragmented Nutrition?

Empty calorie foods, or “junk foods,” are defined as calorie sources sans full nutrient content. Refined calorie sources, whether they are protein, fat, or carbo- hydrates, supply empty calories. We generally think of sugar and empty calories as being synonymous. Refined starches (e.g., flour products) also qualify as empty calories, even though the general public may think of them as “healthy carbs.” Refined oils, too, must be recognised as empty calorie foods, since they are neither whole foods nor do they provide the full complement of nutrients found in the original source. Of course, protein powders of all types also qualify as empty calories as they fit the definition perfectly. It is sometimes difficult to accept that our beloved supplements are no more than junk foods. Nevertheless, flax or any other oil, hemp or any other protein powder, white flour and refined sugar all fall into the same category: empty calories. When you add any of them to your fruits and vegetables, you turn health food into junk food.

Rather than ask, “Where do you get your protein?”, consumers of such refined, isolated empty calories should be asking, “Where do you get your nutrients?” Protein from a can is no more nutritious than sugar from a bag or oil from a bottle; all of these items qualify as junk when compared to whole foods. 

Protein Does Not Build Muscle!

Some may argue that we need to eat great volumes of protein in order to build muscle mass. In fact, if we wish to be able to exercise with sufficient intensity to spur growth in our muscles and related structures, we need to consume sufficient carbo- hydrates to meet our fuel needs—preferably from fruit.

Since protein is one of the three caloronutrients (along with carbohydrates and fats), protein fuel demands rise only when one’s diet is deficient in carbohydrates (as the body is forced to convert the protein into carbohydrates—a very inefficient, energy-draining process).

Eating protein does not build muscle. Muscular growth results from placing a strength overload upon the muscles and then supplying adequate conditions for recovery. Repeatedly using this overload and recovery strategy results in steady and reliable muscular growth and development. The quality of tissue developed will be determined by the foods eaten, and the highest quality tissues will develop as a result of eating fruits and vegetables.

Protein, per se, is not actually used by the body to build new tissue. When foods are eaten, their constituent proteins are broken down during the digestive processes into ever smaller particles: proteoles, polypeptides, dipeptides, and, eventually, amino acids. The amino acids travel to the liver where they are recombined and constructed into the specific proteins needed at any given time. Not only is it a fallacy that protein will result in muscle growth, but the concept that the body needs specific proteins, from fish, meat, eggs, etc. is also fallacious. The body breaks down all proteins to their component amino acids before recombining them. Eating the muscles from animals will not result in our developing bigger muscles. As an analogy, eating animals’ eyes will not improve our vision, nor will eating their brains increase our intellect. 

Kenny Honnas - The Vegan Diet Saved My Life & Healed Ulcerative Colitis

Freshman year of college my entire life was turned upside down. I was in the middle of my first season as a member of the Division III Wheaton College Football team when I was diagnosed with Ulcerative Colitis. I had been experiencing rectal bleeding for weeks along with uncontrollable bowel movements and more than one embarrassing public accident before I finally worked up the nerve to see a doctor. I was quickly diagnosed and put on a regiment of steroids to calm the bleeding and sent home. Three days later the bleeding intensified so much I had to ask a friend of mine to drive me to the hospital where I was admitted into the emergency room. I stayed in the hospital for fifteen days hoping and praying the bleeding would stop before they decided to remove my large intestine. The bleeding eventually slowed down enough for me to be released, and I thought that this was finally behind me. During that stay I went from a 165lb muscular football player to a 129lb person that looked like a holocaust survivor.

       The first thing I did after my release was visit my favorite greasy fast food joint and ate spicy buffalo wings. I had no idea that was the worst thing I could possibly do for my health because every doctor was adamant that diet had nothing to do with the disease. Over the course of the next six months I couldn't seem to get any better than simply being able to get by, no matter what medicine they tried to put me on. Nothing worked, not drugs, steroids, or even FMTs were able to bring me relief from the constant loose and watery stools or putridly foul gas. I was afraid to go anywhere because I never knew if I would have an attack and soil myself before I could make it to the toilet. Only someone who has experienced colitis or crohn's understands the desperation, depression, and anxiety this can drive you too. My athletic performance had dropped significantly and I was nowhere close to the athlete I once was. 

     And then in the summer of 2015 whilst scouring the depths of the internet for some sort of cure, I stumbled across Shukul and Shamiz by the grace of God. Never in my life had I ever even stopped to consider giving up something I loved as much as meat and dairy, that just simply wasn't an option as an athletic red blooded American male. Vegans and Vegetarians were all feminine and hippies and just plain weird, everyone in Texas knew this. You had to eat meat to be a man. And yet, Shukul and Shamiz were scientifically showing that what I had to eat to be a man may actually be the cause of my horrible and debilitating suffering. And not only that, but my athletic performance could actually improve beyond what it ever was before I was ill if I switched to a whole food plant based diet. I was desperate. At this point in my life I was ready to try anything to stop the pain, embarrassment, and increased risk of cancer. I contacted them and the rest is history.

       They were beyond helpful. Patient, prompt, and clear. Every single question I had, which were several, were answered quickly and in full detail. By week three my bowel movements had become easy and painless, better and more regular than I had ever had before in my entire life. I know this sounds too good to be true, but it's not. It's simply eating what our bodies are genetically designed to eat and allowing yourself to heal. There were bumps along the way of course, as they will tell you there will be. But, with patience and persistence you will heal this way. Eight weeks into this diet I went from 140lbs to 157lbs of the purest, leanest muscle I had ever had. It was incredible to not only feel my body healing but to see the change manifesting before my eyes as well. 

      I felt amazing and was only improving every day. I returned to Wheaton in perhaps the greatest shape of my life and played one more season of college ball before hanging up the cleats to pursue my newest passion, plant based living and nutrition. It has now been over seven months since I have transitioned to this lifestyle and I feel vibrant, strong, and healthy. I am currently pursuing my passion for plant based living by studying dietetics and nutrition so that someday I can hopefully help change someone's life the way Shukul and Shamiz have helped change mine. High Carb Health in India

From Shukul:

For the month of February I had been invited to India by Dr Nandita Shah, founder of SHARAN (Sanctuary for Health and Reconnection to Animals and Nature) India to give some talks and workshops on why Plant Based Nutrition is the best solution for peoples health. SHARAN is a wonderful Not for Profit Organisation in India whose vision is a diabetes free India.

My program consisted of giving talks in Mumbai and Pune, talking about disease prevention and reversal via a whole foods plant based lifestyle rather than relying on medications, and my area of expertise, digestive health.  I also conducted a cooking class with the help of one of the SHARAN associates, Reyna Rupani and showed people how to make healthy and delicious food without the use of oil, sugar or any refined products.

I was able to explain to people how to prevent and even reverse our most common chronic diseases such as Heart Disease, Diabetes and even common cancers such as of the breast, prostate and colon. In my digestive health workshop we discussed how to reverse chronic digestive disorders such as Crohns, Ulcerative Colitis, IBS and IBD. The audience was always amazed at the power of correct nutrition and that they now had the ability to prevent and reverse these common conditions! Health is really in your hands.

India has an extremely large vegetarian community. So the majority of people I spoke with did not eat meat! Therefore the main focus was on the harmful effects that cow’s milk has on the human body. We also showed the audience a video on how cows are treated in India. It is truly horrible what goes on in the industry over here. One of the many actions that shocked me was that they put chilli powder in the cow’s eyes, if the cow will not follow directions. Quite a number of people were crying as they realised the harm that occurs to these beautiful creatures. In India, the cow is considered sacred, yet India is the largest exporter of beef in the world!

The programs were a hit! I was able to speak to over 300 people during the 7 events that I ran over 2 weeks. A lot of the people were amazed that the truth about the harm caused by animal products to their health was not commonly known, and many people told me that they felt they had been lied to their whole life. During the cooking class, we made eight dishes including Thai Massuman Curry, Raw Cookies, Mexican Bean Salad and a Raw Cheesecake without any oil and completely from whole plant foods.  Everyone was so pleased when they found out that healthy food is also delicious!

What I have seen is that awareness of Plant Based Nutrition is truly on the rise everywhere. The truth cannot be hidden forever! There are exceptional people everywhere spreading the message of love and compassion is so many ways, whether it be from the angle of animal rights, health or the environment and in many cases all 3 at once! When people hear a message presented in a logical and informative way, their perception changes and we get a shift in consciousness.

So many people told me after the events that they were going to make changes to their lifestyle and this gives me hope for the future. The animals need us, the planet needs us and we need to look after our health. Plant Based Nutrition offers us a viable solution to all 3 of these issues. We just need to reach more people in a manner that connects with them so that we can impact more positive change.

I feel more inspired than ever after my trip to India. Are Eggs Healthy or Safe to Eat?

Eggs have traditionally been seen as an essential part of the human diet. Many health magazines and publications tout the benefits of eating eggs. In this edition of High Carb Health Talk, I delve into the scientific research completed on the consumption of eggs and provide you with a perspective on eggs and allow you to consider whether or not they aid our health. 

Regarding cholesterol, diabetes and the way eggs are marketed, what does the science tell us?

Eggs and Cholesterol

 

Eggs are loaded with high levels of cholesterol. In fact, eating one egg will put you over the recommended daily intake for cholesterol. 

Dietary cholesterol is not required as the human body is able to produce sufficient amounts through the body's own metabolic processes. In fact, the Harvard Nurses’ Health Study found that the daily consumption of the amount of cholesterol found in a single egg appeared to reduce life expectancy in the same way as smoking 25,000 cigarettes. You can see a similar exponential increase in arterial plaque build-up for smokers and egg-eaters. This tells us that contrary to common belief, eggs are definitely not a heart-healthy food; the evidence indicates the opposite is true.

Eggs and Diabetes

In the Spring Edition of Vegan New Zealand magazine, I wrote about diabetes and how excess fat is the real cause. Since eggs have a high caloric percentage of fat (1 egg contains about 5 g of fat), do they affect diabetes risk? The answer is yes; researchers have found a stepwise increase in risk based on how many eggs people eat. Eating just a single egg a week appeared to double the risk, and one egg a day tripled it! Remember Type 2 diabetes is one of the leading causes of death and amputations, blindness and kidney failure. What happens if we eat eggs when we already have diabetes? Studies show eating one egg a day or more appears to shorten one’s lifespan and may double the risk of death for diabetics.

Egg Marketing

Eggs have long been marketed as healthy and full of necessary nutrients and protein. Dr. Michael Greger has a series of videos about eggs (nutritionfacts.org), and as a result of the Freedom of Information Act in the USA, we recently got to see what egg companies there are restricted from saying when using taxpayer dollars to market eggs. (Individual egg companies are allowed to say whatever they want if they are using their own funds.)

Forbidden phrases

Because of existing laws against false and misleading advertising, the United States Department of Agriculture (USDA) did not allow egg industry professionals to describe eggs or egg products as:

  • healthy, healthful or nutritious - because eggs have high amounts of cholesterol (186 mg in a large egg), as well as high amounts of saturated fat, and therefore can contribute to the leading killer in the United States, heart disease
  • aiding in weight loss – they can’t be portrayed as a diet food because of the fat and cholesterol content, and they have nearly twice the calories allowed for the USDA low-calorie guidelines
  • "nutritional powerhouse", “egg-ceptional nutrition”, “pack a nutritional wallop”, “have high nutritional content”, “contribute nutritionally” or containing “healthful components”– see “healthy or nutritious” above

The message is clear. Even phrases like "Eggs are an important part of a well-balanced, healthy diet" would be considered misleading due to eggs’ fat and cholesterol.

They can't even refer to eggs as safe. "All references to safety must be removed," because more than a hundred thousand Americans are poisoned with salmonella every year from eggs.

What’s left?

After those mighty efforts, advertising was finally approved for:

  • "find true satisfaction" 
  • "can reduce hunger"
  • “fresh”
  • “affordable”

As we have seen, the reported health benefits of eggs that we may see are not justified. There is no valid reason to eat them. Eggs are definitely not nutritious, healthy or safe to eat. They increase our risk of heart disease, stroke and diabetes, and for these reasons, should never find their way onto our plate.

The Real Cause of Diabetes

At High Carb Health, we focus on promoting healthy eating via a low fat, whole foods plant based diet rather than drugs as a way of preventing and reversing lifestyle diseases such as Type 2 Diabetes, Hypertension, digestive disorders such as Crohns, Ulcerative Colitis, IBS/IBD and more. Please note that whenever I mention Diabetes in this article, I am referring to Type 2.

 

This is a topic I discussed in my talk at the Green Living Show, in Auckland at the ASB Showgrounds, the real cause of Diabetes. The most common way of looking at this disease, which is now at epidemic proportions, is to focus on the symptoms. High blood sugar has now become synonymous with Diabetes to the point that the majority of the population believes that this is the cause. This however could not be further from the truth.

 

If sugar isn’t the cause, then how does Diabetes occur? The pancreas, an organ in your abdomen, produces insulin, which is a hormone that it sends into your bloodstream, to travel to the various cells in your body. Like a key sliding into a lock, insulin attaches to a receptor on the cells surface, which in-turn opens the door and ushers the glucose in.

 

In Type 2 Diabetes, this system is not functioning correctly.  The pancreas makes insulin, and this insulin travels to each cell, but when it arrives, it has trouble opening the door. This means that glucose cannot get into the cells and builds up in the bloodstream. There is nothing wrong with the key (insulin) and nothing wrong with the lock (cell membrane), except there is something blocking or jamming the lock.

 

So what is it that could be jamming the lock? The substance is called intramyocellular lipid (intra – means “inside”, myo – is “muscle”, lipid – is “fat”), it is literally fat inside muscle cells. Therefore the real cause of Diabetes is insulin resistance caused by excess fat in our muscle cells. This excess fat acts like glue, which jams the lock, and the key (insulin) is not able to open the door and let the glucose in.

 

Because of this knowledge we now have around insulin resistance, we have been able to prove that Diabetes can be reversed. Making a dietary correction to a low fat, whole foods plant based diet is a scientifically proven method of reversing diabetes (currently the only proven method of Diabetes reversal). This is because it reduces the fat build up within the cells and reverses the trend towards gradually worsening insulin resistance.

 

The epidemic of Diabetes need not exist. We need to spread this knowledge of how a low fat, whole foods plant based diet can assist with the reversal of this crippling disease which has an enormous impact on heart health, eye health and is the leading cause of amputations and blindness.

How to Prevent High Blood Pressure with Diet

From Nutritionfacts.org:

The most comprehensive and systematic analysis of causes of death ever undertaken allows us to answer questions like how many lives could we save if people cut back on soda? The answer? 299,000. Soda isn’t just bad because it’s empty calories, so it’s not a health-promoting food. It appears to be an actively death promoting food. Of course not as deadly as bacon, bologna, ham, or hot dogs. 800,000 deaths every year, killing twice as many women than domestic violence; five times more people than all illegal drugs combined.

But eating more whole grains could save 1.7 million lives, more vegetables, 1.8 million lives. If only we ate more nuts and seeds, 2 and a half million lives saved, but fruit is apparently what the world needs most (they didn’t look at beans). 4.9 million lives hang in the balance every year, and the cure is not drugs or vaccines; the cure is fruit.

One reason why plant-based diets can save so many millions, is because the #1 killer risk factor in the world is high blood pressure, laying to waste 9 million people year after year.

In the United States, high blood pressure affects nearly 78 million—that’s one in three of us and as we age our pressures get higher and higher, such that by age 60, it strikes more than half. If it affects most of us when we get older, maybe it’s less a disease and more just a natural, inevitable consequence of getting older? No. We’ve known for nearly a century that high blood pressure need never occur. Researchers measured the blood pressure of a thousand people in rural Kenya who ate a diet centered around whole plant foods. Whole grains, beans, vegetables, fruit, and dark green leafies. Up until age 40, the blood pressures of rural Africans were about the same as Europeans and Americans, down around 120s over 80s, but as Westerners age, their pressures creep up such that by age 60 the average person is hypertensive, exceeding 140 over 90. But what about those not following the Western diet? Their pressures improved with age, not only did they not develop hypertension, their blood pressures actually got better.

This whole 140 over 90 cut-off is arbitrary. Just like studies show that the lower the cholesterol the better, there’s really no safe level above about 150. Blood pressure studies also support a “lower the better” approach to blood pressure reduction. Even people who start out with blood pressure under 120 over 80 appear to benefit from blood pressure reduction, but is it possible to get blood pressures under 110 over 70? It’s not just possible, it’s normal, for those eating healthy enough diets.

Over two years at a rural Kenyan hospital, 1800 patients were admitted. How many cases of high blood pressure did they find? Zero. Wow, so they must have had low rates of heart disease. No, they had no rates of heart disease. Not low risk, no risk. Not a single case of arteriosclerosis—our #1 killer—was found.

There was a great turn out and we hope some people learnt a few new things about sustainable plant based nutrition! We talked about the environmental impact of the food we eat and covered key nutrition topics such as protein and calcium. The whole foods plant-based lifestyle is the healthiest way of eating that has ever been studied and is far more effective in promoting health and preventing disease than prescription drugs, surgery, vitamin and herbal supplementation, and genetic manipulation.

 

Plant based nutrition provides us with the best solution for our health and for the environment. Did you know that 91% of Amazon rainforest destruction is caused by animal agriculture? Also, it takes 660 gallons of water to produce 1 hamburger.
